Foodie Crops! Cauliflower Greens and Orange/Purple Cauliflower!

As always, life has been busy. I went to my local No Frills and found these unique crops in the veg section. I found the following unique crops: Purple Cauliflower, Orange Cauliflower and Cauliflower greens! I have never tried these variants before. Needless to say, I was excited and hope my kids share my passion to try. I had my friends asking if I had dyed them. Nope. They are 100% natural.
Orange cauliflower is also called “cheddar” cauliflower (solely because of its color, not because it tastes like cheese). ... The orange color comes from the natural pigment beta-carotene. The orange cauliflower has more beta-carotene than the white, which results in 25% more Vitamin A than the white kind. The purple color in cauliflower is caused by the presence of anthocyanin, which is exacerbated by sun exposure.
In the end, I did a quick boil to cook these crops. How do you cook them?
